Recipe: Protein Cheesecake

Recipe: Protein Cheesecake | Purus Labs

Ingredients:

  • 1 Package Neufchatel or low fat Cream Cheese (8 oz) Room Temp.
  • 2 Large eggs
  • 1/2 cup fat free Greek Yogurt (plain)
  • 1 Scoop MyoFeed Homemade Vanilla Wafer
  • 4 Packets or 3 Tsp Truvia
  • 1/2 Tsp Vanilla Extract
  • Sliced Strawberries

Directions:

Preheat the oven to 325F

Grab two Ceramic Ramekins (those are little white circle dishes that you can find in the home goods section of your local superstore)

Grease Ramekins with some coconut oil, top to bottom.

Mix the Neufchatel cheese, eggs and yogurt until smooth.

Add your Myofeed, Truvia and vanilla. Mix that up well.

Pour a thin layer of the batter into each Ramekin, add a layer of Strawberries*, and add the remaining batter to each ramekin.

Grab a casserole dish and fill with one inch of water. Place the ramekin pans into the water and put the whole thing in the oven.

Bake at 325F for about 25 minutes or until top is stiff and a little cracked but not browned (We recommend that you begin to check  your cheesecakes after 15 minutes).

Reduce your oven temperature to 200F and bake for another 8-10 minutes or until a toothpick inserted comes out clean but damp.

Allow cheesecakes to cool and serve up with extra strawberries.

Tip: Just cut this recipe in half for a single serving ;)

*This recipe can be made with no fruit, just check for doneness around 15 minutes as there will be less liquid throughout.
